Taco Bueno’s refried beans, which sit inside the bean burrito, the Muchaco and the MexiDips, list rendered bacon fat in the chain’s last published ingredient guide, and its chili sauce is made with beef. The dependable picks are the cheese quesadilla, queso, guacamole, chips and Mexican rice. So what about the vegetarians? Bill Waugh opened the first Taco Bueno in Abilene, Texas, in 1967. Over the next five decades the chain changed hands often. British food company Unigate bought it in 1981, CKE Restaurants in 1996, Jacobson Partners in 2001, Palladium Equity Partners in 2005 and TPG Growth in 2015, according to Wikipedia. It filed for Chapter 11 in 2018, came out of bankruptcy in January 2019 and now belongs to Sun Holdings.

Taco Bueno’s website lists every item with calories and macros but no ingredients and no allergen chart. The 2018 guide lists the same numbers to the decimal. Chips with queso (300 calories) and the cheese quesadilla (720 calories) match as well. The Cheesecake Chimichanga doesn’t. It’s 192 calories on today’s site and 260 in the 2018 guide, so that recipe has changed. Treat the 2018 guide as strong evidence and not a current label. Ask the restaurant before you order if the answer matters to you.

Two sauces matter here. The refried bean seasoning lists rendered bacon fat, whey and natural smoke flavor. The chili that goes into burritos lists beef, beef fat and beef base. Anything the menu describes as “spicy chili sauce” is the second one. Plenty of Taco Bueno items carry one or both.

Quesadillas: The Safest Hot Item

The cheese quesadilla is the one entree on the menu with no meat or beans in it. It’s a flour tortilla filled with a cheddar and pepper jack blend, grilled. The tortilla uses vegetable shortening (palm or corn oil), and the ingredient list shows no lard or animal fat. It’s heavy at 720 calories and 1,141 milligrams of sodium, so plan on sharing it or pairing it with something light.

No chicken stock appears in the list. Vegetarians can eat it. Vegans should note that the butter flavor isn’t spelled out as dairy-free, so I mark it ⚠️.

Don’t order Beans & Cheese as a side. It’s the refried beans with chili sauce and cheddar, so it fails on both counts. For dessert, the Cheesecake Chimichanga is cheesecake filling in a flour tortilla, fried and dusted with powdered sugar. It has no meat, but I mark it ⚠️ because the recipe changed after 2018 and no current ingredient list exists. The 2018 version had milk and eggs in the batter and L-cysteine, a dough conditioner that can come from animal sources, in the tortilla. It’s never vegan.

How to Build a Meal at Taco Bueno

You won’t find a bean burrito alternative here, so build a plate from the parts that pass. Three combinations cover most appetites:

  • Light: chips with guac and a side of Mexican Rice.
  • Standard: a cheese quesadilla, a side of guacamole and Mexican Rice.
  • Share: a large chips and queso, a cheese quesadilla and chips with guac for the table.

Order at the counter or through the app, and say “no meat, no beans, no chili sauce” if you change anything. A customized order is easy for the kitchen to get wrong, and the safe items above need no changes at all.

What’s Vegan at Taco Bueno?

Not much, but there’s a short list. Guacamole is vegan. The corn chips list no dairy or egg. Chips with guac is the clean vegan snack. The flour tortilla lists vegetable shortening, wheat protein and dough conditioners with no dairy or egg, but no vegan item is built on it, so you’d have to ask the kitchen to assemble something. Mexican Rice is the maybe, because of the butter flavor.

Queso, sour cream, cheddar, pepper jack and the cheesecake chimichanga all contain dairy. Taco Bueno has no vegan menu and no vegan protein. If you eat vegan, a stop here means chips and guacamole.
