Looking for Rubio’s vegetarian options? The chain built its name on fish tacos, but the July 2026 menu still gives you a roasted sweet potato taco, a bean and cheese burrito, a cheese quesadilla, loaded nachos, and several bowls and salads that work without meat. Find the rest of the meat-free picks on our what about the vegetarians homepage and in the guides below.
A Quick Look at Rubio’s Coastal Grill
Ralph Rubio opened the first Rubio’s in 1983 at a former Orange Julius site on Mission Bay Drive in Pacific Beach, a San Diego neighborhood, according to Wikipedia. The company now has its headquarters in Carlsbad, California, and calls itself the home of the Original Fish Taco.
Ownership has changed more than once. Mill Road Capital took the company private in 2010. Rubio’s filed for Chapter 11 in October 2020 and again on June 5, 2024. In August 2024, its lender bought the chain for about $40 million, per Wikipedia. Rubio’s had 82 restaurants as of January 2025 (17 in Arizona, 60 in Southern California, and 5 in Nevada), per Wikipedia, which cites the chain’s locations page. Rubio’s still groups every restaurant under Arizona, California, or Nevada, so you won’t find one in most of the country.
That footprint matters for how you use this guide. Check the locations page on rubios.com first, because Rubio’s still lists a few closed restaurants there (Poway, for one, carries a Closed tag).
Rubio’s Vegetarian Options: What to Order
Rubio’s posts a one-page menu from July 28, 2026, plus a searchable allergen chart updated in June 2026. Rubio’s publishes no vegetarian list, so we sorted the items below by their listed ingredients and by the milk, egg, and fish marks in the chart. Cheese, sour cream, and creamy sauces carry milk. That’s why most rows are vegetarian but not vegan.

Rubio’s marks no allergens on the roasted sweet potato itself, so the egg and milk on the taco and bowls come from the sauces and toppings. Pick it from the protein list when you build a burrito or bowl.
Tacos and Burritos
The Roasted Sweet Potato Taco is the one taco on the current menu built without meat or seafood. It comes on a flour tortilla with corn chips, cabbage, cilantro and onion, spicy arbol sauce, and avocado crema, and Rubio’s lists it at 340 calories. Rubio’s marks egg, milk, soy, and wheat on it. You can order tacos a la carte or as a two- or three-taco plate with two sides. Skip the Taco Tuesday hunt, though. The July 2026 menu prices only the chicken, steak, and fish tacos at the Tuesday discount, not the sweet potato taco.
Burritos give you two routes. The Bean and Cheese Burrito (750 calories, mild salsa) takes no protein choice, and Rubio’s marks milk and wheat on it. The rest of the burrito list comes with a choose-your-protein menu that includes roasted sweet potato. Skip the Quesa Bacon, which has bacon in the name and on the build, and the Coastal Catch, where Rubio’s marks shellfish on the base.
Bowls and Salads
The Rainbow Bowl is the best-looking meat-free build. Rubio’s builds it with citrus rice, black beans, roasted sweet potato, Tajín pineapple salsa, avocado, cabbage slaw, corn, al pastor sauce, and avocado crema. The California Bowl (citrus rice, black beans, guacamole, cabbage, pico, avocado tomatillo vinaigrette, and chipotle crema) and the Mexican Street Corn Bowl follow the same pattern. Ask for roasted sweet potato as the protein on each.
Salad fans get the Mercado, which stacks romaine and cabbage with black beans, guacamole, corn, cotija, pico, corn chips, and avocado tomatillo vinaigrette. Rubio’s marks only milk on it. The Baja Caesar Salad and the Chopped Salad are trickier. Rubio’s marks fish, egg, and milk on both bases (dressing included), yet it marks no allergens on its Chipotle Caesar Dressing row. Rubio’s doesn’t explain the gap, so ask the cashier what goes into the base before you order either one.
Sides, Shareables, and Kids’ Meals
The sides list is short: tortilla chips, guacamole, queso, Mexican or citrus rice, black or pinto beans, Mexican street corn, and french fries. Rubio’s marks no allergens on the guacamole, the chips, or either rice. It marks milk on both bean sides because they come topped with melted cheese, and egg and milk on the Mexican street corn. A Rubio’s disclaimer that Veggl quoted in 2024 says the chain fries the chips and both rices in a fryer it shares with fish and chicken, so strict vegetarians should read the allergy notes below.
Among the shareables, the cheese quesadilla comes with guacamole, sour cream, pico, and chips, and loaded nachos pile on guacamole, pinto beans, sour cream, pico, and melted cheese. Street Fries add guacamole, cheese, pico, spicy chile de arbol salsa, and crema. Kids can get a bean and cheese burrito (590 calories) or a cheese quesadilla (540 calories) with two sides.
What’s Vegan at Rubio’s?
Few items come vegan as listed. Rubio’s marks milk or egg on nearly every composed item, because cheese, crema, and the ranch dressings all carry them. A 2024 vegan guide from Veggl, written for an older menu, listed Impossible meat, grilled veggies, a lemon agave vinaigrette, and cauliflower rice, but none of those appear on the July 2026 menu PDF. Treat that list as history.
Your best bet is a bowl or taco with roasted sweet potato, black beans or pinto beans, guacamole, and salsa. Tell the cashier to leave off the cheese and crema. Veggl’s 2024 FAQ says the “No-Fried” Pinto Beans don’t contain lard, but the current chart doesn’t speak to it, so confirm at the counter if you eat strictly vegan.
Special Dietary Requirements and Allergies
- Shared cooking surfaces. Rubio’s says on its allergen page that cross-contact can occur and that blank cells aren’t an allergen-free guarantee. Veggl’s 2024 guide quotes a Rubio’s disclaimer: the chain cooks tortilla chips, tortilla strips, churros, and both rices in canola oil in a fryer it shares with beer-battered pollock, chicken bites, and chicken taquitos, and it cooks fish, shellfish, vegetables, and toasted cheese on the same grill. The June 2026 chart doesn’t repeat either line, so ask your restaurant.
- Fish and shellfish in odd places. Rubio’s marks fish on the Baja Caesar and Chopped Salad bases, and shellfish on the Coastal Catch and Quesa Bacon burrito bases.
- Egg and milk in sauces. Chipotle Lime Crema, Lime Crema, Ranch, and Chipotle Ranch each carry egg and milk. Tartar sauce carries egg.
- Sauces missing from the chart. Rubio’s gives no separate chart row for al pastor sauce, avocado crema, spicy arbol sauce, or Tajín pineapple salsa, so you can’t check them on their own.
- Cheese rennet. Rubio’s doesn’t say whether its cheeses use animal rennet. If that matters to you, ask before you order cheese-heavy items.
- Rice. Rubio’s marks no allergens on either rice and names no cooking liquid. The fryer note above matters more.
Tips for Vegetarians at Rubio’s
- Choose roasted sweet potato as the protein, and most burritos and bowls become meat-free meals (not the Quesa Bacon or Coastal Catch).
- The Bean and Cheese Burrito is the simplest order, since it takes no protein choice.
- Before you order the Baja Caesar, ask what its base contains, since Rubio’s marks fish there.
- Pass on the Quesa Bacon and Coastal Catch burritos, and on any build with beer-battered fish.
- With about 82 restaurants in three states, you should check the locations page before you drive.
- Keep the searchable allergen chart open on your phone while you order.
- Add guacamole and black beans for a bigger plate.
Rubio’s Vegetarian Options: Common Questions
Conclusion
You can eat well at Rubio’s Coastal Grill without eating fish, as long as you build around the roasted sweet potato and check the sauces. Start with the taco or the Rainbow Bowl, and ask about the Baja Caesar base if you want a salad. For more Mexican-style picks, see our guides to Baja Fresh, Chipotle, Del Taco, and Qdoba.
