Joe Kahn opened the first Condado Tacos in 2014 in the Short North neighborhood of Columbus, Ohio. Kahn had worked his way up through restaurant jobs since age 15, from Sizzler and Pizza Hut to bartending and a management role at a Chicago bar called The Outpost. He and a group of partners then built a build-your-own taco concept around a shared central kitchen. It caught on fast in Columbus and grew into a regional chain across the Midwest and Southeast.

In February 2020, the New York private equity firm The Beekman Group took a stake in Condado Tacos through a recapitalization. Kahn stayed on as CEO and largest shareholder.

That investment funded a growth plan aiming for up to 100 US restaurants by 2026. The chain has not hit that number. Technomic’s 2026 Top 500 report counts 53 US locations and about $181 million in 2025 US sales. 2026 also brought a handful of closures in newer markets. The original Broad Ripple location in Indianapolis closed, along with a Mount Pleasant, South Carolina restaurant and a Greenville, South Carolina location that shut down after a rent dispute. Condado Tacos kept opening new restaurants elsewhere the same year, including a January 2026 location in Independence, Ohio. This reads as normal lease-level attrition in a few markets, not a chain-wide pullback.

How the Build-Your-Own Menu Works

Building your own order here follows a simple system. Start with a base: a double-decker taco, a single shell taco, a burrito, a packed bowl, or nachos. Pick a protein next, then load up with toppings, cheese, and sauces. Every printed menu inside the restaurant carries a dietary key next to almost every ingredient. You can build a vegetarian or vegan order without asking your server to look anything up.

Vegetarian and Vegan Proteins to Order

The protein list is where Condado Tacos vegetarian options start. Four choices work without any substitution: Thai Chili Tofu, Roasted Portobellos, and Veggie Chorizo + Poblanos are all vegan, cooked without dairy or egg. Rice + Black Beans, sold as a single protein option, is vegan too now that Condado cooks its black beans without butter. Queso Blanco and the Mexican Street Corn side are built on real cheese. Despite carrying a vegan-looking tag on Condado’s own website, treat both as vegetarian, not vegan. Bacon Refried Beans are not vegetarian at all.

In the chips and dips section, Garden Salsa and Green Garden Salsa are vegan. Street Corn Guac and the queso flights are vegetarian because of the dairy, and the Corn Salsa is vegetarian because of the cilantro-lime aioli on top. Watch the Pineapple Guac, which pairs guacamole with chipotle honey. That honey-based sauce contains fish according to Condado’s allergen chart, so despite sounding like a fruit-forward dip, it is not vegetarian at all.

What’s Vegan at Condado Tacos?

Vegan options here run wider than most build-your-own Mexican chains. Order a hard corn, flour soft, or firecracker shell. Add one of the four vegan proteins (tofu, roasted portobellos, veggie chorizo, or rice and black beans) plus vegan toppings and sauces like guacamole, garden salsa, or Mexican chimichurri. That gets you a full vegan taco, bowl, or nacho plate. The Vegan Bowl is vegan straight off the menu with no substitutions. Skip these if you’re strict vegan: any real cheese (queso blanco, queso fresco, pepper jack, smoked cheddar, cotija), sour cream, bacon refried beans, Avocado Ranch, Cilantro-Lime Aioli, and Chipotle Honey.

Special Dietary Requirements and Allergies

Condado Tacos does not use peanuts or tree nuts in its restaurants, but it does use pepitas (pumpkin seeds) elsewhere in the kitchen, and the chain warns of possible cross-contact with tree nuts and peanuts through its vendors. The only shellfish item on the standard menu is a shrimp taco add-on. Tortilla chips and tofu are cooked in shared fryer oil, so ask about cross-contact if you are strict about shared equipment.

A few sauces carry hidden allergens. Avocado Ranch has dairy, egg, and soy. Cilantro-Lime Aioli has egg, even though it is not flagged with a dairy icon. Chipotle Honey has fish and soy, on top of the honey that already rules out vegan.
