The Corner Beet: What’s Vegetarian Editorial Review
The Corner Beet is a fully vegetarian cafe and juice bar in Denver’s Capitol Hill neighborhood. Nothing on the menu has meat or fish. Most dishes either come vegan or swap to vegan with one change, so vegetarians and vegans can both order without a second thought.
What to order
Start with the Loaded Breakfast Burrito. It costs $15 and packs scrambled eggs, cheddar, crispy potatoes, black beans, sour cream, and pico de gallo into a grilled tortilla. Ask for it vegan and you get tofu scramble, house-made vegan queso, and sunflower crema. On the Breakfast Sandwich ($15), you get a maple sage roasted lion’s mane mushroom on a ciabatta roll with egg, cheddar, spinach, and vegan spicy mayo. For something lighter at breakfast, the Beirut Plate ($17) pairs creamy labneh with eggs, pickled turnips, cucumber, olives, and za’atar toast.
Lunch leans on sandwiches. Get the Tofu Banh Mi, which comes full for $19 or half for $14 with crispy tamari tofu, pickled carrots, jalapeño, and cilantro. A tofu bacon B.L.A.T. comes with spinach, tomato, avocado, and vegan spicy mayo. Want a salad? The Thai Peanut ($19) is vegan and gluten free as written. If you eat dairy, the Bloomin’ Burrata ($17) and the Garden Grove salad ($16) both lean on burrata.
Toast runs from The Old School avocado toast ($9) to the Pistachio Bianca ($13), which layers labneh, za’atar, honey, and pistachios. A daily soup costs $9 and arrives with garlic ciabatta. Add-ons include a Just Egg patty for $3.50 or tofu scramble for $4. You can build a plate from the sides list too, which includes tri-colored home fries, crispy tamari tofu and a lion’s mane patty.
The drinks
Juice first. Staff press organic juice in house every day from a rotating list. You can order it by the glass, as a ginger or turmeric shot, or as a $13 flight. Coffee covers drip, lattes, cold brew, cortados and a cacao hot chocolate, with almond, coconut, oat or whole milk. Superfood lattes such as the Tap Root (beet, ginger, cinnamon, and honey with coconut milk) cost $6.75 for 12 ounces. Tea comes from Balanced Root Apothecary, the sister shop next door.
The kitchen
Everything here comes from scratch, and the cafe keeps no meat line, so vegetarians have no cross-contact to worry about. Many dishes take a gluten-free swap for $2, and the daily soup does too. Look for the codes on the menu: V for vegan, VO for vegan option, GF for gluten free, and GFO for gluten-free option. Eggs, dairy, and honey share the menu with the vegan dishes, so a strict vegan should say so when ordering. Honey is the catch for strict vegans. You’ll find it in a few dishes, each marked with a footnote. Pasture-raised eggs carry their own footnote for undercooked or raw service.

The Denver Gazette covered the cafe in April 2025 and called it a vegetarian’s heaven.
