Ragi dosa swaps in finger millet flour for straight rice batter. Rava Masala dosa builds the crepe from cream of wheat instead of a fermented rice and lentil batter. Pair any of them with idli, the steamed rice cakes, served the classic way in idli sambar or dressed up as mini idly masala. Medu vada, the doughnut-shaped lentil fritter, rounds out the South Indian starter lineup.

North Indian dishes fill out the rest of the menu for anyone not in a dosa mood.
