It’s not a long list, but what’s there is a genuinely solid sandwich, not an afterthought bolted onto a meat-first menu.

What to order at Firehouse Subs

The Veggie Sub starts with hot, steamed sauteed green bell peppers, caramelized onions, and mushrooms, then gets topped with provolone, cheddar, and Monterey Jack, plus lettuce, tomato, and dressing. As served, it’s vegetarian, not vegan. The Firehouse Salad and Side Salad both work too, and either one goes fully vegan if you order it without the mozzarella. Italian, balsamic, and oil and vinegar dressings are all vegan.

What to watch out for

For a vegan Veggie Sub, hold the three cheeses and the mayo, and lean on the vegan dressings instead. Watch the sauteed mushrooms too, since they may carry a Worcestershire-style sauce, and standard Worcestershire contains anchovy. The wheat sub roll contains honey and the King’s Hawaiian roll contains milk, so the plain white roll or gluten-free roll are your safer bread choices if you’re being strict. Ranch dressing, mayo, and honey mustard are all vegetarian only, not vegan. Bagged chips from third-party brands carry a warning too, so check the label if you’re being careful.
