Everything on the menu is 100% vegan, the banh mi sandwiches cost under $12, and the all-you-can-eat buffet packs in 15-plus plant-based dishes at once. Owner Tanya Nguyen opened the spot in 2011 and has been feeding the neighborhood, literally and figuratively, ever since. If you want Vietnamese food without any animal products and without any guesswork about what’s safe to order, this is your place.

What’s vegan and vegetarian at ChuMinh Tofu & Vegan Deli

The whole menu is vegan. There’s no separate vegetarian section because there’s no need for one. Tanya transitioned the restaurant to fully plant-based in 2016, and as of that point everything, including the mayo on the banh mi, is vegan. That means zero cross-contamination risk from meat, zero need to quiz your server, and zero awkward substitution requests. The kitchen makes its own tofu and house-prepared faux meats, which show up throughout the menu as seitan-based “chicken,” “pork,” “beef,” and “duck.”

Signature dishes to order

The B1 Spicy Tofu Sandwich ($9.95) is the top seller and the dish that put ChuMinh on the map, so start there. It’s a classic banh mi loaded with seasoned tofu, pickled daikon and carrot, cucumber, cilantro, and a kick of jalapeño on a crispy baguette. The B2 Spicy Lemongrass Chicken ($10.95) and B3 Barbecue Pork ($10.95) follow close behind in popularity, both built on seitan that holds its own surprisingly well. For soup, the NS1 Vegan Pho ($17.95) is rich and comforting, and it’s gluten-free. If you’re going for the buffet, plan to fill your plate with braised jackfruit, curries, tofu preparations, and eggplant, then go back for more.

How to order

You’ve got two main paths. Dine in and hit the all-you-can-eat buffet for around $25 per person, which gives you the widest variety and the best value if you’re hungry. Or order off the regular menu for banh mi, noodle soups, rice combos, salads, and appetizers at a la carte prices. Takeout and delivery (via UberEats and DoorDash) are both available, and the menu is posted at chuminhtofu.com. No reservations are taken, so plan to walk in. The restaurant is open Tuesday through Saturday from 11am to 8pm and Sunday from 11am to 7pm. It’s closed Mondays.

What to watch out for

Gluten is worth noting if that’s a concern for you. Many dishes can be made gluten-free (the menu marks GF items clearly), but the seitan-based faux meats contain wheat gluten by definition. Stick to the tofu options and the GF-marked soups and salads if you’re avoiding gluten. Parking in the International District can be tight, so give yourself a few extra minutes. And if you’re aiming for the buffet specifically, call ahead to confirm it’s running on your visit day, since hours and service styles have shifted over the years.

Yes, by a wide margin. The food is affordable, the vegan commitment is airtight, and the community story behind the restaurant makes it even easier to feel good about eating here. Every Sunday since 2018, Tanya and a group of volunteers called The Eggrolls have handed out 200 to 250 free meals to unhoused neighbors in Little Saigon. The Seattle Kraken honored her in 2023 as a “Hero of the Deep” and donated $32,000 to Real Change in her name. In 2026, the city awarded ChuMinh a forgivable Tenant Improvement Program loan to upgrade the tofu-making operation. This isn’t a restaurant that stumbled into a good reputation.
